There are some food items that we eat according to our mood or according to the season. And the rainy season is one of those seasons where my desire for eating sweets and pudding rises. And one of my favorite desserts that I love to eat in the rainy season is the soft and crispy Malpua with Rabdi.

Malpua Rabdi with Sugar Syrup

Malpua is a famous traditional Indian sweet from Rajasthan and Orissa. And it is usually made during the festive seasons like Sankranti and Holi in India. They are like Pancakes that are made using White Flour (Maida), Milk, and Semolina (Sooji).

But only Malpua is incomplete with it being dipped in the Sugar Syrup and served with the creamy white Rabdi. The crispy and sweet dessert can help you satisfy your sweet cravings. And I still remember when I was trying to make Malpua Rabdi with Sugar Syrup at home for the first time, I searched on the internet and there was no exact recipe that told the Malpua Rabdi Recipe with Sugar Syrup.

So I asked one of my family friends that knew the recipe and now, today I am going to share the same Malpua Rabdi Recipe with Sugar Syrup with you all. But before we jump onto the recipe, let’s check out some other desserts that you might like.

Ingredients for Malpua Rabdi Recipe with Sugar Syrup

– For Malpua Rabdi

White flour (maida)4 tbsp
Semolina (sooji)1 tbsp
Baking powder¼ tsp
Cardamom powder½ tsp
Milk¼ cup
Pure gheeEnough to fry malpua
Sugar½ cup
Sodium bicarbonate (Meetha soda)¼ tsp
Almonds, Pista and silver leavesEnough for garnishing

– For Rabdi

Milk1 Liter
Sugar1 Cup
Saffron1/2 tsp
Pistachios1 tsp
Almonds1 tsp
Cardamom powder1 tsp

– For Sugar Syrup

Water½ cup
Sugar½ cup
Sodium bicarbonate (Meetha soda)¼ tsp

Making of Malpua

  • Take a bowl, add 4 tbsp maida, 1 tbsp sooji, ¼ tsp baking powder, and ½ tsp cardamom powder.
  • Add ¼ cup milk to it, pour slowly to avoid lumps in the batter.
  • In a preheated pan add pure ghee.
  • Put the batter in heated ghee in round shape.
  • Cook it well from both sides until crispy on the edges.
  • Place the on a plate.

Making of Rabdi

  • Boil Milk and add a cup of sugar and mix it well.
  • Then saffron, pistachios, almonds, and cardamom powder to the milk and mix it well until the batter becomes smooth.
  • Keep it aside to cool and then you can enjoy your Rabdi with the Crispy Malpua you’ve made.

Making of Sugar Syrup

  • Add ½ cup sugar, ½ cup water, and ¼ tsp of meetha soda in a bowl.
  • Boil it till thick texture.

Before Serving

  • Dip the Malpua in this sugar syrup for a minute.
  • Take them out, garnish it with Pista, almonds, and silver leaves.
  • Serve them hot or warm with Rabdi.
