One day, a friend of mine organized a friend’s get-together party. In the menu, a lot of things were cooked but the only thing that made me mesmerized is that Grilled Halloumi Recipe. After the party ends, I asked her who was the cooking host for this party.

Sweet red peppers2
Large zucchini1
Japanese eggplant1
Scallions (trimmed)1 bunch
Salt and pepperas required
Olive oil1/4 Cup
Fresh thyme or crumbled dried mint2 tsp
Sumac (optional)1 tsp

Grilled Halloumi and Vegetables Recipe
  1. First of all, prepare a hot grill and cut the halloumi into 8-12 slabs.
  2. Cut peppers into large pieces and discard the seeds.
  3. Cut Zucchini and eggplant into slices (1/3 inch thick rounds).
  4. Sprinkle salt and pepper on all vegetables and halloumi and brush it will olive oil.
  5. Grill all the vegetables completely (vegetables will take 10 minutes) and arrange it on a platter.
  6. Scallions will take 3-4 minutes to get ready.
  7. Grill halloumi for approximately 2-6 minutes.
  8. Take it out gently to the platter with vegetables and drizzle it with olive oil.

Garnish it with herbs and sumac and serve it accordingly. You can enjoy this recipe with your friends and family anytime!
