Ingredients

For The Salad

  • 1 small Romaine Lettuce (finely shredded)
  • 1 Celery Heart (chopped)
  • 1 Apple (cored, cut into 1cm pieces)
  • 100 g Grapes (washed, halved)
  • 200 g King Prawns (peeled, deveined)
  • 1 cup Walnuts

For The Dressing

  • 100 g Greek Yogurt
  • 1 ½ teaspoon Dijon Mustard
  • 1 teaspoon Cider Vinegar
  • ½ Lemon (juiced)
  • 1 teaspoon Salt
  • 1 teaspoon Freshly Ground Black Pepper (for taste)

Instructions
 

  • Begin by toasting a cup of walnuts in a non-stick frying pan over medium heat until they turn golden and crisp for two to three minutes.
