How To Make Gordon Ramsay’s Mini Apple Galettes At Home

Gordon Ramsay’s mini apple galettes are a great idea for holiday desserts. I would tell you that they are delicious and flavorful. But as a real-life Joey (‘Joey Doesn’t Share Food’), the best part about it is that they are individual desserts and you don’t have to share them with anyone. The recipe for Gordon Ramsay’s mini apple galettes also includes the recipe for the pastry. The dough for the galettes is very similar to pie dough. So, you can use this dough to even make pies.

Mini Apple Galettes

Galettes are a French flat round cake of pastry and it is often topped with some kind of fruit. Apples are a great choice of fruit for this. The crostata is the Italian version of the galette. They both can be sweet and savory. But we prefer the sweet and so does Gordon Ramsay.

Gordon Ramsay’s recipe for mini apple galettes is not complicated, just a bit lengthy, and that too if you want to make the dough from scratch. The thing is, the dough needs to be chilled after kneading and you have to wait for a while. If you don’t want to wait, you can just buy the dough.

You can also use palm shortening to make the dough. If you don’t have it, here is a list of palm shortening substitutes. Homemade dough tastes much better. Let’s move on to the complete and detailed recipe for Gordon Ramsay’s mini apple galettes. But before you check it out, explore the other Gordon Ramsay’s Thanksgiving recipes.

Steps To Make Gordon Ramsay’s Mini Apple Galettes

1. Making The Sweet Shortcrust Pastry Dough From Scratch

Take a large bowl and add flour, powdered sugar, cinnamon, and salt to it. Mix these dry ingredients first. Then, add the diced butter to the mix and rub it with your hands to break them down into small pieces.

After that, add the beaten egg to it and mix. Also, add about 1-2 tablespoons of ice water to it (add more water if needed). Mix everything with your hands until a rough dough with some loose crumbs is formed. You can also use a food processor if you want, but this is just more traditional and awesome.

Knead the dough lightly using your hands and then roll it into two small dough balls. Cover the dough balls with cling film and place them in the refrigerator to chill for about half an hour.

Once the dough is chilled, place it out on a flour-dusted surface and roll it. The dimensions of the dough should be about 16-inch oval, 8-inch wide, and ¼-inch thick. Then, place a 6-inch plate on the dough and cut around the edges to make a 6-inch dough round. Discard the dough scraps. Make three more dough rounds in a similar way.

Now, take 2 baking sheets lined with parchment paper and place the dough rounds on them, two on each. Place the baking sheet in the refrigerator for 10 more minutes.

2. The Forbidden Fruit

To make the filling, take a medium bowl and add sugar, orange zest, ground cinnamon, cardamom, and cloves to it and mix. After that, add the apples to this mixture and toss them so they get covered. Lastly, add vanilla extract and lemon juice to it and toss again.

3. Welcome To The Assembly

Now that the pasty dough is chilled and the filling is ready as well, it’s time to assemble the galettes. Firstly, in a small bowl, add egg and cream and mix them with a fork.

Then, place the apples in the middle of the pastry dough in a pretty pattern leaving ½ inch space at the sides. Repeat this process for the other three pastry dough rounds. Now, fold the sides of the pastry over the apples and crimp them a little. Brush the rims of the pastry with the egg wash. Lastly, sprinkle some demerara sugar along the edges of the pastry.

Place the baking sheets in the oven and bake the galettes for about 30-35 minutes until the pastry looks golden brown. After that, take them out and let them rest for about 10 minutes. Serve the galettes with whipped cream, vanilla bean ice cream, or caramel sauce. This is Gordon Ramsay’s serving suggestion to get the most of this delicious dessert.
