  1. Over the medium heat in a pot melt the butter with olive oil. When the butter and olive oil heated add onions while stirring occasionally until it will tender.
  2. When the onion tender itself, add thyme, sherry, beef broth, and sprinkle the season over them with salt and pepper. Simmer the mixture for 30 minutes.
  3. Heat the oven broiler for some time.
  4. On the top of the soup place one slice of bread and put the soup in a serving bowl.
  5. Put the slice of provolone, slice diced swiss, parmesan cheese, and place bowl of soup on the sheet and broil until it will turn brown.
  6. Serve Immediately.
