  1. First of all, preheat the oven to 350 degrees and make several holes in the eggplant with a fork and place it on a baking sheet.
  2. Bake it until it gets completely softened. Keep it aside to get it Cool completely. Gently remove the skin and then chop it.
  3. Take a pan, heat oil and then add garlic in it and cook it until the colour changes.
  4. Put it outside in a bowl, add the remaining tbsp oil, sugar, oregano, vinegar, and basil, mix it until the sugar gets dissolved.
  5. Add the chopped eggplant and coat it with the mixture. Sprinkle salt and pepper as required and mix it well.

Refrigerate it for hardly 1 hour before serving. Now, your Eggplant Salad is ready to serve. I hope you all like it and have it as a part of your diet.
