3. Blackberry Pork Chops with Rosemary
This is the perfect recipe for a meaty, sweet summer dinner. Delicious pork chops are glazed with blackberry jam to give it that nice sweet flavor, then topped with fresh rosemary sprigs for an aromatic smell and taste. Your family will love this easy-to-prepare recipe!
Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 4 Ingredients 1/4 cup blackberry jam (any brand)
- 2 tbsp canola oil (extra-virgin is always best!)
- 1 tsp salt (kosher or sea salt are best – do not use table salt!)
- 1 tsp ground black pepper (freshly ground are best! You don’t want that powdery taste)
- 4 garlic cloves, minced (fresh garlic is best for this dish!)
- 4 boneless pork chops with bone-in are great too if you can find them!
Heat your cast-iron skillet over high heat until hot. Add the canola oil then sear each pork chop on both sides until browned nicely. This should take about 5 minutes per side. Reduce heat to medium-low, then brush each pork chop generously with blackberry jam glaze on both sides until all the jam is used up. Cook for another 5 minutes, then transfer into a plate and cover it with aluminum foil to keep warm. Add minced garlic cloves and rosemary sprigs to the pan. Stir continuously for 30 seconds or until fragrant! Remove from heat immediately; this step is essential because if you cook it longer, it will burn your garlic which will ruin your dish! It’s best to remove it right away after cooking so that they don’t overcook! Now turn your burner back onto high heat, then pour in 1/2 cup of dry red wine (or white if you don’t like red wine!) into the pan and stir continuously to scrape up all those flavors that are coating your cast iron. Let it simmer for about 3 minutes or until it reduces, then turn off the heat immediately. Drizzle this delicious sauce over your pork chops before serving!
Serve with vegetables of choice!
