Ingredients
  

  • 1 English Hothouse Cucumber
  • ¼ Ripe Honeydew Melon
  • ¼ cup Raw Pistachios
  • ½ Jalapenos
  • 2 tbsp White Wine Vinegar
  • 1 tsp Honey
  • 3 tbsp Extra Virgin Olive Oil
  • 1 pinch Kosher Salt
  • 1 pinch Freshly Ground Pepper
  • 5 ounces Ricotta Cheese
  • ½ cup Basil Leaves

Instructions
 

  • At 350°F, preheat the oven. On a rimmed baking sheet, toast pistachios for 10 minutes until they turn golden.
  • In a small bowl, mix together chile, vinegar, and honey. Whisk the mixture constantly with salt and pepper.
  • Take cucumber and melon and cut them into slices with a knife and place them in a large bowl with cheese, basil, pistachios. Season them with salt and pepper.
  • Serve it immediately.
