Cilantro Lime Chicken Recipe
- Prepare the marinade by mixing 1 tbsp of lemon zest, 2-3 tbsp of lime juice, half of the chopped cilantro, olive oil, minced garlic, cumin and a pinch of salt and pepper.
- Place the chicken thighs in a large zip-top bag and add in the marinade. Toss it well so that the marinade covers the chicken thighs well. Let it marinate for 30 minutes. You may keep it overnight to marinate in a refrigerator, too (optional).
- When the chicken thighs are ready to cook, heat a large skillet over medium-high heat and place the chicken on the hot skillet.
- Cook each side of the piece for about 5-7 minutes or until it is browned and cooked properly.
- Top up the cooked chicken with some more cilantro and squeeze in some lime juice.
Plate it and serve hot! Add some lemon wedges for garnishing.
