  • Dutch Processed Cocoa Powder – To make the cookies chocolate flavored, we will need 2 oz Dutch processed cocoa powder. Compared to natural cocoa powder, Dutch processed cocoa powder is smoother and more flavorful. It also provides a darker color in comparison to natural cocoa powder.
  • Baking Soda – Baking soda is a leavening agent. We will add three-fourth teaspoons of baking soda.
  • Salt – Salt helps to bring out flavors. You will need half a teaspoon of salt.
  • Brown Sugar – Brown sugar adds moistness to baked goods. To make gooey chocolate marshmallow cookies, you will need two third cups (4.8 oz) of light brown sugar.
  • Granulated Sugar – To make the cookies perfectly sweet, you will need one-fourth cup (1.8oz) of white granulated sugar.

Steps To Make Chocolate Marshmallow Cookies

1. Combine The Ingredients 

Sift and combine flour, cocoa powder, baking soda, and salt in a bowl. In another bowl, combine the sugars and melted butter (just warm, not hot).

Add egg and vanilla extract. Now mix both dry and wet ingredients. Let the dough sit for 10 minutes.

2. Stuff The Mini Marshmallows

Scoop out two roughly two tablespoons of cookie dough and flatter them slightly using your hands. Place six pieces of mini marshmallows in the center and pinch and roll the dough in between your hands to lock them inside. 

You can also small chopped pieces of dark chocolate at this point. 

Make sure to seal the cookie dough balls properly; otherwise, the marshmallows will leak outside and stick to the tray.

3. Bake The Cookies

Preheat the oven to 350 degrees F. Place the cookie dough balls, 1-inch apart, on a baking sheet lined with parchment paper. At this point, you sprinkle the cookies with demerara sugar, if you like.

 Bake the cookies for 9-10 minutes until they look dry and set on top but are soft inside. Take the tray out of the oven.

 Place a round cookie cutter, slightly larger than the cookie, on top of the cookie and swirl it around every piece of cookie. 

Let the chocolate marshmallow cookies cool on the baking tray for about 10-15 minutes. Shift them to the cooling rack only when they are stiff enough to move without any breakage. The cookies will firm up once cool.

  • cups All-Purpose Flour
  • ½ cup Dutch Processed Cocoa Powder
  • ¾ cup Mini Marshmallows
  • ¼ cup White Granulated Sugar
  • ¾ teaspoon Baking Soda
  • cup Light Brown Sugar
  • ½ cup Unsalted Butter, melted and cooled slightly 
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Demerara Sugar, Turbinado Sugar, optional
  • ½ teaspoon Salt


  • Melt the unsalted butter and set aside to cool a bit. You need the butter only slightly warm.
  • Preheat the oven to 350 degrees F and line the baking tray with baking /parchment paper.
  • Mix flour, cocoa, baking soda, and salt in a medium bowl. Set aside.
  • In another large mixing bowl, add the sugars to the butter and whisk until well combined. Add the egg and vanilla and whisk the mixture until smooth.
  • Add the dry ingredients and fold them with a spatula until just combined.
  • Let the cookie dough rest for 10 minutes.
  • Take about two tablespoons of the cookie dough and roll it into a ball between your palms.
  • Make a cavity in the center and add six mini marshmallows to the middle.
  • Pinch the edges of the cookie dough and seal it properly to cover the marshmallows completely.
  • Lightly roll the cookie dough balls between your hands to make them round. Place the balls on a baking tray, about 2 inches apart.
  • Sprinkle the cookie dough balls with a little demerara sugar over the top if using. Bake the cookies for 9-10 minutes.
  • Optional: Place a round cookie cutter, slightly larger than the cookie, on top of the cookie and swirl it around every piece of cookie. This will make them perfectly round and also thicken them slightly.
  • Allow the cookies to cool on the trays for 10-15 minutes until they harden enough to move them to a wire rack without breaking.
  • The cookies will firm up once they cool.
