I happened to visit Hawaii for some business purposes. I was introduced to Chicken Long rice by one of the chefs at a restaurant. Although I was unaware of this dish, I found it very tasty. So I asked the chef about the recipe. Once I got back home, I made Chicken Long Rice and served it to my family as well. Now it is one of my favourite dishes and I cook it very often.
Originally, this was a Chinese dish. But later it was adopted by Hawaiians and now it is very popular there. If you are a chicken lover, then surely you would love to eat Chicken Long Rice. It is a very light and mouth-watering dish as well as easy to make.

Ingredients used for Chicken Long Rice Recipe:
|Chicken broth||32 oz.|
|Soy sauce||3 tablespoons|
|Ginger (Peeled and Grated)||2 tablespoons|
|Chicken thighs (boneless & skinless)||1 lb.|
|Bean thread noodles( Cellophane noodles)||8 oz.|
|Green onion sliced||1/4 inch slices|
|Garlic Minced||3 cloves|
Note : Use gluten free soy sauce and chicken broth.
Chicken Long Rice Recipe
- First put chicken broth, soy sauce , garlic, ginger and sugar in a large stockpot and combine them.
- Once it gets boiled, add chicken thighs(after washing and draining). At this point, reduce heat and simmer , uncovered for next 30 – 40 minutes.
- Meanwhile, put bean thread noodles in a large bowl or container and pour warm water over them so that the noodles get covered completely. This is done to loosen them up while the chicken and broth are being cooked.
- When the chicken gets cooked thoroughly, use a slotted spoon to remove it from broth(broth shouldn’t be discarded) and transfer it to a cutting board. Allow it to cool.
- Cut chicken into 1/4 inch thick pieces. Discard bones and skin.
- Stir noodles into the broth and simmer until noodles are soft and translucent.
- Add more soy sauce for taste. Season with chilli and pepper.
