  • 1 Large Onion (chopped)
  • 2 medium Carrots (chopped)
  • 2 Celery Ribs (chopped)
  • 3 Garlic Cloves (minced)
  • 6 Cups Chicken Stock
  • 1/2 Cup White Wine or Apple Cider
  • 2 Teaspoons Sugar
  • 2 Bay Leaves
  • 5 whole peppercorns

For Dumplings

  • 1-1/3 Cups All-Purpose Flour
  • 2 Teaspoons Baking Powder
  • 3/4 Teaspoon Salt

  1. Take a small bowl, put half a cup of flour, salt and pepper in it and mix them together. Then add chicken pieces one by one in the mixture to make a coating over the pieces and shake excess of the coating. Then take a stockpot and heat it on a medium-high flame. Cook it until the chicken pieces are brown and then remove the batch from the pan.
  2. Then in the same pan, add onion, carrots and celery. Cook this for 6-8 minutes. Add garlic in it and cook and stir it for 1 minute. Put in 1/4 cup flour and blend it properly. Keep stirring it properly by adding wine, sugar, bay leaves and peppercorns. Put the cooked chicken in the pan and start boiling. Reduce the heat of the pan to the sim and cover it for 20-25 minutes until all the chicken juices are soaked.
  3. Then take a bowl, add flour, baking powder and salt it to make dumplings. In another bowl, stir milk and melted butter and blend it together. Add this to the flour mixture and stir till it’s moistened. Take some tablespoons of it and put it on a baking sheet.
  4. Take the chicken pieces out from the stockpot and let it cool for a bit. Take out the leaves from the pan in which the chicken was cooking. It is for the soup. Remove the bones and skin from the chicken. Then again, put these pieces inside the soup. Cook it covered on a high flame for some time.
  5. Then put those dumpling pieces inside the soup, one by one. Then reduce the heat to a low temperature. Cook it while keeping it covered for 15-18 minutes. Gently remove the dumplings and insert toothpicks. And insert cream, parsley and thyme. For extra texture, add salt and pepper and your dish is ready to be served.
