A chicken bowl is a hearty bowl of ingredients loaded with flavours and nutrition. It has a lot of vegetables, rice and chicken. It fills your gut and is really healthy. It is also not that hard to make.

I love to have a meal that’s both healthy and hearty. One day, when I was looking for such a recipe, I came across the recipe for this chicken bowl. It seemed delicious and had great ingredients like vegetables, chicken, and rice. It was aesthetically pleasing as well as delicious. I loved every bite of it. I advise anyone who likes to eat healthy to try it.

To make the chicken bowl, marinate and cook the chicken. Then, cook the peppers. Cook the rice and mix chicken broth, garlic, lime juice and cilantro in it. Combine all the dressing ingredients in a bowl. Now, in a serving bowl, add rice, beans, corn, lettuce and onion. Top with avocado and pour the dressing all over the ingredients. The chicken bowl is ready!

Large Bowl


For Chicken and Peppers

  • 500 g Chicken
  • 2 Bell Peppers
  • 2 tbsp Lime Juice
  • 1 tbsp Oil
  • 1 Garlic Clove Minced
  • 1 tsp Ground Chilli
  • 1 tsp Ground Cumin
  • 1 tbsp Salt
  • 1 tbsp Chopped Cilantro

For The Rice

  • ½ cup White Rice
  • 1 cup Chicken Broth
  • 1 Garlic Clove Minced
  • 2 tbsp Lime Juice
  • 3 tbsp Chopped Cilantro

For Bowl

  • 5 cups Romaine Lettuce Leaves
  • 7 ounces Black Beans
  • 7 ounces Corn
  • ½ Chopped Onion
  • 1 Chopped Avocado

For Dressing

  • 2 tbsp Olive Oil
  • 3 tbsp Lime Juice
  • 1 tbsp Chopped Cilantro
  • 1 Crushed Garlic Cloves
  • ½ tsp Brown Sugar
  • ¼ tsp Ground Cumin
  • ½ tsp Salt
  • 1 tsp Red Pepper Flakes


For Chicken Bowl

  • In a large bowl, add lime juice, oil, garlic, cumin, salt, chili, and cilantro. Apply this mixture properly on the chicken thighs. Marinate it for 30 minutes.
  • In a pan, over medium heat, add olive oil and sear the chicken from both sides until it turns golden, for about 10 minutes.
  • When the chicken is cooked, wrap it in the foil and set it aside to rest.
  • In the skillet, drizzle some oil, add peppers and cook until charred. Add salt and pepper to season.

For Rice

  • In a pot, over high heat, add rice, chicken stock, and garlic. Mix them properly and boil with the lid on until rice cooks.
  • Mix the cooked rice with lime juice, cilantro, salt, and pepper.

For Dressing and Assembling

  • In a bowl, mix all the dressing ingredients.
  • In another bowl, add the rice, lettuce, beans, corn, onion and peppers with chicken strips. Top with the chopped avocado and then, pour the dressing over all the ingredients.
