When I was reading the Harry Potter book series, I happened to come across a very unique beverage-Butterbeer. Well, it was first mentioned by Ron in the Harry Potter and the Prisoner of Azkaban, when he suggested visiting Three Broomsticks to have the same.

Now, if you have ever been to Universal Studios Hollywood, then you already know that the Diagon Alley serves the Butterbeer Ice cream which is simply delicious.
And being a true fan, I had to give this a try at home. That is when I started experimenting and within no time, I got the perfect recipe which captured the true essence of the wizard world.
However, this ice cream version has a touch of alcohol from the butterbeer sauce but you need not to worry as long as you are not an elf (well, Winky who was an elf got addicted to butterbeer because of the alcohol content).
Having said that, you can try different versions of this ice cream but the one with custard base is my personal favorite. It not only makes the ice cream more rich but also adds depth to the overall flavor. So, without any delay, let’s get straight to the recipe.
Equipment Required
- Medium Sized Saucepans: We will need saucepans to make the custard. Moreover, we will also make the butterbeer sauce in the saucepan only but a different one. Also, if you are planning to reduce the cream soda then again you would need a small or medium sized saucepan depending on the quantity of the soda.
- Bowl: To make the custard with eggs and sugar, you would need a bowl so that you can whisk it smoothly.
- Ice Cream Maker: As we are making ice cream, we definitely need an ice cream maker which will help to crystallize and thicken the mixture.
- Spatula: To fold the custard mixture together and also stir the milk while it is simmering, you will need a spatula.
- Whisker: Whisker comes handy for me to beat the eggs and make it fluffy when I don’t want to use a blender.
- 2 Steel Bowls (Small And Medium): Before putting the ice cream base in the freezer, you have to chill down the mixture through an ice bath. For this, I use 2 steel bowls (one is smaller than the other).
- Strainer: To avoid any cooked egg pieces in the base, you would need a strainer so that you can strain the base and get a smooth base.
- Small Pot: I usually reduce the cream soda and for that I prefer using a small pot so that it does not get burned.
- Thermometer: While making the butterbeer cause you need to check the temperature when it is done so use a thermometer for the same.
- Ice Cream Container: You will need a good ice cream container so that you can freeze the ice cream.

Note: This recipe is big enough to serve six cups of ice cream. If you want to make more or less, you must adjust the recipe accordingly.
Butterbeer Butterscotch

How To Make Harry Potter Butter Beer Ice Cream
- Start with adding butter, corn syrup, and brown sugar in a saucepan and let it boil.
- Take off the heat and then add heavy whipping cream in a thin stream while stirring.
- Now, add the salt, vinegar, rum extract, and stir. Let cool to room temperature.
- Now, take a pan and add soda to boil at medium flame. Let the liquid reduce to 3 tablespoons. For this, boil the liquid for at least half an hour.
- Meanwhile, take another pan and bring the milk and cream to a simmer.
- Now, beat the eggs with sugar and salt till it gets thick and ribbony. Stir the milk and cream mixture into the eggs.
- Pour the mixture back into the saucepan and cook until it thickens.
- After this, strain the custard into a bowl. Add the butterbeer butterscotch and the soda reduction, stir. Prepare an ice bath to cool it down quickly. Let it cool.
- Chill mixture in the fridge for sometime and then run through the ice cream machine according to directions.
- Pour the ice cream into an ice cream container and freeze for 4 hours or until firm.

- If you want to enjoy richer notes, then use egg yolks. You can use 4 egg yolks along with 1 whole egg or just 6 egg yolks. This will make your ice cream smooth and thick.
- I usually prefer whisking the custard with my hand, and for that, I prefer whisking it by holding the bowl in hand instead of the counter as it’s much faster and gives a smooth base.
- While mixing the egg mixture with the heated milk, make sure to go slow, or else you will end up making scrambled eggs.
- Try to make your own Butterbeer butterscotch, or else you can buy the butterscotch from the store and add some rum extract and vinegar.
- It is best if you reduce the cream soda rather than add it as it is, or else it will make your custard watery. It would only take an hour or so to reduce the cream soda. To avoid burning, use a small pot.
