  • Vegetable Oil, Kosher Salt, and Ground Black Pepper – This is the simple marination for your chicken wings. We don’t want to add too many flavors as the curry is flavorful enough for both of them. 
  • Canola Oil – You need to deep fry the wings. You can use canola oil for it. If you don’t have canola oil, peanut oil works fine too. 

For The Thai Curry Sauce

  • Thai Chile Pepper and Green Pepper Tabasco Sauce – The minced Thai peppers and the green pepper sauce make the curry spicy and hot. 
  • Coconut Milk – The coconut milk gives a rich taste and a smooth consistency to the curry.

1. Phase One: Wings On Fire 

You are entering phase one of the recipe, which is marinating and frying the wings. In a resealable bag, add the wings along with oil, salt, and pepper. Shake the bag vigorously so the wings get covered with marination. Then, refrigerate the wings for about 2-3 hours. 

Then, take the wings out of the refrigerator. For frying the, pour the canola oil into a large skillet and heat it to a temperature of 375℉. Place the wings gently into the oil and fry them for 5 minutes from each side. When they turn golden brown from both sides and are cooked perfectly, take them out using a slotted spoon. Drain the excess oil on paper towels.

2. Phase Two: The Spicy Curry

Now, we start with the second phase of the recipe, which is making Thai curry. While you are frying the wings, place a saucepan on heat as well. Pour the coconut milk, lime juice, and yogurt into the saucepan. Also, add the Thai pepper paste, green pepper sauce, ginger paste, and the Shan spice mix to the saucepan and mix them to combine.
