Equipments Required

  • Mixing Bowl: I prefer using a large bowl, and I recommend you use the same, to get a consistent mixture.
  • Measuring Cups and Spoons: I always use this equipment to maintain the correct measurements of my ingredients.
  • Spatula: You can opt for a silicon spatula or a wooden one for an even mix.
  • Mandolin: For the perfect slices of onions, I use a mandolin. You can also use a sharp knife if you don’t prefer a mandolin.

Expert Tips That I Recommend

  • I suggest using sweeter red onions, which are from the Vidalia variety. This type of onion has a less pungent flavor.
  • I mostly prefer using a combination of different types of vinegar. I use white or balsamic vinegar and red wine vinegar to get a deeper flavor.
  • I suggest adding fried curry leaves or other herbs like thyme, along with a bit of cumin powder or fenugreek powder, to top it over the pickled onions to get a punch of fried and savory taste of herbs.
  • I also suggest blanching your onions for a milder, pungent taste.
  • I also suggest adding olive or regular oil to your pickled onions for enhanced flavors and it also acts a preservative.
