    They never say to cover the rice when your boiling it. Also it says 2C rice 1C water & 1 C coconut milk. When a person ask how much water do you use for 2 C rice, they answered the person with 4 C of water. 4 C of water and 1 C of coconut milk your going to end up with soup.
    Do you cover the pan when boiling the rice. Also when cooking rice and onions in the fry pan it says when bottom of rice is Crispy it is done. Don’t you have to turn it over and crisp up the other side. Do you stir it up right before serving or do you serve it all Crispy on top.

    1. Thank you so much for your detailed comment, you are raising some very valid points! You are correct that 4 cups of water are needed to cook 2 cups of rice properly. In our recipe, I have actually used pre-cooked rice, which is why the water measurement is not mentioned in the ingredients.

      For the crispy rice step, we do turn it over while serving and stir it gently so that the crispiness is evenly distributed and not just on the top.
