In the modern world, having healthy high-protein items instead of carbohydrates is a new rage. Beef jerky is one such high-protein snack that can be easily stored in the house and enjoyed whenever desired. Some beef jerky brands use a lot of preservatives, sugar and even gluten. The best way to lay hands on the favourite snack is to make it at home on your own.

Initially, the entire process of seasoning, prepping, dehydrating and packaging the jerky may seem to be tedious, but actually, it is effortless. Fancy types of equipment are not necessary to prepare this at home. You only need the right ingredients, an oven to put the jerky in a dehydrator to dry. Within a few hours, the jerky is ready to be served! 

Ingredients for Beef Jerky

Beef (top roast, rump roast or London broil, thinly sliced)3 lb
Gluten-Free Soya Sauce1 cup
Worcestershire Sauce½ cup
Oregano1 tbsp
Liquid Smoke2 tb
Ground Black Pepper2 tsp
Paprika2 tsp
Garlic Powder1 tsp
Onion Powder1 tsp
Honey1 tsp
Red Pepper Flakes1 tsp

You can all these ingredients from the nearest supermarket. Now you guys must be thinking about the actual recipe. But before jumping into that, let’s check out how much time it will take.

  • Cut off the excess fat from the slab of beef. The meat should be cut into ⅛ the inch slices and kept in a large zip bag. 
  • Now mix the remaining ingredients in the bag and allow the chilling for around 45 minutes.
  • The oven should be pre-heated to about 175 degrees F. Take three sizeable rimmed baking sheets and place it with foil and a metal rack over the foil of each pan.
  • Beef should be laid in the rack in a single layer and baked for around 4 hours. After 3 hours, take out one and check if it is properly cooked.
  • Store the beef in an airtight container at room temperature for 1-2 weeks.

  1. Choosing the right cut of beef:

 Flank steak is often considered as the ideal choice for beef jerky, but it is quite expensive. Instead one should look for cheaper alternatives without compromising the taste. 

A lean cut of beef without a lot of fat should be the ideal choice as the fat causes beef jerky to turn rancid very fast. That is why a thin piece of top roast, London broil or rump roast is chosen. 

  1. Freeze the beef and slice it thin:

Beef, being difficult to cut into thin, even slices, requires to be frozen before slicing. Freezing the meat for 30-45 minutes will make the process much more comfortable. 

Then the beef should be sliced into 1/8th inch slices against the grain. Cutting against the grain often provides the jerky the tender texture, which is much appreciated and enjoyed. It is not mandatory that all the slices should be of the same width. However, the closer they are in thickness, the better the result.

  1. Marinating the meat slices:

You should check whether all the ingredients are correctly mixed and no sneaky chemicals are providing an extra flavor to the jerky. Then you can start marinating with a base of gluten-free soya sauce and Worcestershire sauce.

One can also use low sodium soya sauce or coconut aminos instead. The beef should be well marinated for at least 45 minutes.

  1. Racking the meat: 

The wire rack should be placed over a baking sheet and the beef strips should be laid across the rack.

  1. Baking:

Turn the oven to 175 degrees F, and meat is allowed to bake slowly for about 3-4 hours. Those using convection ovens, 2-3 hours is enough.

  1. Checking: 

Leaving the meat in the oven for too long will turn it into crackers. So after three hours, it should be taken out and tasted. Then you can put the jerky in a dehydrator and monitor the dehydration process, preventing harmful additives from reaching the strips.

  1. Storing:
    It can be kept in an air-tight container at room temperature for about two weeks.
