It’s Baked Cod which is juicy and tender. Cod is a fish that is mild with plenteous white flakes and delicate meat and can be flavoured however you want. Seasoning is definitely the key! It can be had with mashed/roasted potatoes, garlic bread or a good salad. I use cod to make great fish and chips too. It severs as one proper meal.
Cod is an incredible fish and one of the most sold in America, as it is one of the most versatile too. Cod is excellently salted already but I recommend it to be lightly salted and then allowed to sit for a few hours in the fridge. This lures out the moisture and makes the meat firm and nice. This technique is especially helpful in frying.
I learnt making Baked Cod through an online lesson. Since then, I have been committed to making a perfect baked cod. I can now say I do a pretty good job at it. I have a fixed menu for the coming weekend and Cod is a part of it. I am all excited to share the recipe with you all. Are you?

|Cherry Tomatoes||1 cup|
|Garlic Cloves (smashed but not peeled)||2|
|Round Sliced Lemon, plus more for garnish||1|
|Freshly Chopped Parsley (for garnish)||2 tbsp|

Baked Cod Recipe
- Preheat the oven to 400 degrees F.
- Firstly, pat the cod fillets with a paper towel to remove excess water. This helps in better cooking of the fish. Sprinkle salt and freshly ground black pepper on top.
- Now, in a baking dish (9×13 casserole dish with high sides), add cherry tomatoes, thyme, round cut lemon slices and garlic and pour olive oil over. Mix them well with your hands.
- Nuzzle the cod fillets into the baking dish.
- Bake for 15-20 minutes, until the fish flakes easily with a fork at the thickest part.
- And, its ready! Garnish with parsley and lemon slices and serve it up.
Pro tip: Place the lemon slices under the fish so that the fish does not stick to the bottom and the lemon juice seeps into the fish.
